A RARE RECIPE FROM A SLAVE COOK

Resipee For Cukin Kon-Feel Pees---- Gather your pees 'bout sun-down. The folrin day, 'bout leven o'clock, gowge out your pees with your thum nale, like gowgin out a mans eye-ball at a kote house. Rens your pees, parbile them, then fry 'em with som several slices uv streekt middlin, incouragin uv the gravy to seep out and intermarry with your pees. When modritly brown, but not scorcht, empty intoo a dish. Mash 'em gently with a spune, mix with raw tomaryers sprinkled with a little brown shugar and the immortal dish ar quite ready. Eat a hepe. Eat mo and mo. It is good for your general helth uv mind and body. It fattens you up, makes you sassy, goes throo and throo your very soul. But why don't you eat? Eat on. By Jings. Eat. Stop! Never, while thar is a pee in the dish.-----Mozis Addums [Found on page 253 of HOUSEKEEPING IN OLD VIRGINIA]

A service man once wrote about a moment of comedy he had witnessed in the army. It happened during a company inspection at the Redstone Arsenal in Alabama............The inspection was being conducted by a full colonel. Everything had gone smoothly until the officer came to a certain soldier, looked him up and down and snapped, "Button that pocket, trooper!" ......The soldier, more than a little rattled, stammered, "Right now, sir?"........."Of course, right now!" was the reply..............Whereupon the soldier very carefully reached out and buttoned the flap on the colonel's shirt pocket. The officer had been quick to notice the youngster's uniform problem, but hadn't noticed his own..............For some reason, we seem to be the same way. The faults of others stick out like a missing tooth, while our own are hard to spot. Small specks in other people seem major, while the planks in our own eye seem excusable[Matt. 7:1-5]

Interesting Reading

Found this old newspaper clipping from THE COURIER JOURNAL, Louisville, Ky. Dated 1953. Check it out. "Speaking of buckeye salve," writes Lee Daniel, Hazard, "back in the 1920's most mountain folk owned one or more horses. I had a pair of mules and two or three horses. One morning I went to the barn and found my best one-a blooded Tennessee walking horse-with one leg swollen twice normal size. Several neighbors stopped by and examined it, but nobody could diagnose the trouble..........I happened to remember a little horse trader,Elish (peanut) Wooten. He came by, examined the trouble and said: "I'll cure this horse for $5." I agreed......He walked over to a big buckeye tree on the place, peeled an armload of bark, put it in Granny's old wash kettle, then filled it with water and boiled it down to a thick ooze......"Late that afternoon he filled a washtub with the ooze, put the horse's lame foot in it, and worked most all night bathing the leg. the swelling was most all gone by morning. And there, just above the hoof, we found a 10-penny nail!......."Back in my boyhood days, Granny sent us young 'uns out to gather buckeyes. She'd mash them up, boil with water in a kettle till thick, then strain into big half-gallon gourds. this she called buckeye salve, and applied it to all members of the family with an ache, pain, or any kind of misery."
